So I finally got a day off, and figured there wouldn't be much of a better way to spend it than in front of the smoker with a few cold beers. Grabbed a 6.5 lb. butt from the store Saturday evening, got it rubbed and in the fridge.
Here it is ready to go in the smoker. I used stevecylka's rub recipe.
A couple of Q-View's. The first is about 3 hours in, the second is about 7 hours. Apple wood for the smoke.
Foiled at 170, and into the cooler for a bit at just over 190.
The finished product. The pic makes it look a little small, but there's a split in the bark in the upper left corner of the pic.
Tossed the meat with SoFlaQuer's pork finishing sauce. The family loved it, and the wife says it may be one of the best meals I've ever made.
