Just wondering what everyone does. When you foil your pork butts at 165, do you foil around the thermometer, or pull it out and re-insert it through the foil?
When I do a butt, I always have a disposable aluminum foil pan from the dollar store under it. I've done a few in the pan and they came out just as good. Either way, if you want to foil, toss the butt in the pan and cover with a sheet of foil, leaving the thermo in the butt.
