Well a busy day of work behind me and a busy day of smokin ahead! I boned out some bone in turkey breasts at work today and soaked them in fresh water to remove some of the brineing solution that is in most of the comercial turkey you find in grocery stores today. Then I mixed up Pops lowsalt brine and ran it through our comercial vacum tumbler (a larger version of Todds tumblers he is selling) for 20 mins to cure the breasts before smoking.When I got home Mrs SOB and I oiled them up and put them in some ham socks for hanging in the smoker...take a look.

Un fortunately I ran out of propane so I finished these up in the oven but they still will eat awesome.


ooh yeah...almost forgot the 3 whole pork butts I had on the UDS.

time to make some finishing sauce.
