We're headed back home for Thanksgiving and I was thinking about smoking an 8# turkey breast the Sunday before we leave (Thanksgiving being Thursday). Would it keep until then? If so, how would you go about smoking then reheating it several days later? Thanks in advance.

After it is cooked take the meat off the breast, vac seal it and freeze it. Take it with you in a cooler, reheat in the oven in a shallow covered pan until hot enough to serve.

Cliffcarter has a good idea , and would work-however, if I understood his post right , he has the meat coming out of the vac-bag and heating in the oven in an open pan.

I feel this would dry out the meat as it heats , (IMHO) , it would fare best placed in a pot of boiling water and heat it there...then cut the bag open and pour into the serving platter.Still juicy and tender.

If I miss-understood your post Cliff, I appologize.

I realized later that I didn't explain well enough, but didn't get back 'til now. The heat in the oven should be low, 200° at least but no more 250° or you do run the risk of drying out the meat. The keys to oven reheating are low heat, keeping it covered and getting it out on time so you don't begin cooking it again. If you want to ensure enough moisture put 1/4-1/2 cup chicken or turkey broth in the pan with the meat, but if you do keep the heat on the high end. BTW I did mention covering the pan in my first post.

The boiling water is method is used by a great many as well and is probably more fool proof than an oven reheat.

Thanks, Stan, no apologies necessary.
