Hey I'm Michael. I live in Leander Texas. I have an Old Country "Pecos" smoker bought from Academy at the first of the summer. Also an MES 30 from Cabela's bought in Feb or Mar of this year. I enjoy smoking. Probably more brisket and sausage than anything else. I'm cooking. A 2.68 lb split brisket from HEB on the MES as we speak. I know it's not a great cut, but what I had time for today. I will eventually add an Pellet smoke generator from Todd. Today I wanted to test the soldering iron in can to add extra smoke. It seems to work well,but still require too much babysitting.

Welcome fellow Texan... I have the Pecos too, been very pleased with it.  Made a few modifications recently that have really helped.  You'll find lots of information on this site, just snoop around a while.

Really? That's cool. I'd like to know more about the mods. I haven't had any trouble with mine, but there's always room for improvement. I actually have used it for grilling steaks way more than I have smoking.

Michael...  i don't use mine for grilling, only smoking... I added a grate below the smoking grate to put a pan of water if I want or to put charcoal if I decide to charcoal.  That way the charcoals not on the bottom of the barrel.  The other thing is a charcoal basket in the firebox.  I was going through more wood and charcoal then I thought I should with it poured into the firebox.  The basket is the same width as the plate and just below the hole going to the barrell.  I'm not using near the charcoal and all of it's burning and being used.  Really helps keep the temp consistant as. I made it out of streched metal by finding an example on youtube.

That's it, but the mods really help... good luck... JB
