I don't have much experience with smoking.  I just ordered a Masterbuilt 30, so we will see how it goes.  I would like to smoke all kinds of meats, but the main reason I bought a smoker was to make some venison sausage.  I deer hunt a LOT and always process my meat myself.  I typically cut some in steaks and grind the rest for any recipe that calls for ground burger.  I decided I would like to use that ground meat for different things like sausage and jerky, so I bought a smoker.  Deer season is underway and I'm looking forward to smoking some deer (in more ways than one

)!  If there are any basic sausage smoking how to post please point me in the right direction.
