hello all, my name is Chris and i joined this board recently after getting into smoking on my Traeger. I'm currently located in Grand Island, NE as a truck parts salesman, and since getting my cooker, i've become a bit obsessive about learning how to make the best possible bbq i can. I tend to focus on pork shoulder and ribs, with an intention on moving into brisket, jerky, and poultry in the near future. I have a solid foundation in traditional Italian and southern cuisine. I was brought up in South Jersey and my grandparents lived in southern Delaware. I've always had a love affair with BBQ ever since my dad took me to East Carolina and Nashville and Memphis for vacations as a kid, and until now i was stuck making my shoulders in a crock pot with a dash or ten of liquid smoke to get my fix. Ever since getting my Traeger Lil' Tex Elite, I've been a smoking machine, going through about 25 lb of pellets a week.
