Hey everyone... I've been checking out the forum for a couple of weeks now, it's been very informative and helpful. I really enjoy checking out the differenct posts and seeing what people have tried that has worked, and of course those things that have not!
I'm located in Pottsboro Texas, north of Dallas on Lake Texoma. Tools of choice are the Old Country BBQ Pecos Smoker and Brinkman Smoke n' Grill for smaller meals. Also have access to a custom 7' off-set smoker that I use for bigger groups.
Been active in smoking for a few years, volunteering to smoke/grill/fry at church events and other events around town. I take it seriously and want to improve my techniques everytime I light it up. Haven't partcipated at cook-offs yet, but I attend them whenever I have the chance.
I look forward to seeing and hearing what people have to say about smoking. I've found it to be a challenge, but very rewarding hobby and pasttime. My problem is I'm pretty critical of my own product, so I'm always looking for new ideas and recipes. Glad to see such enthusiasm and responses from everyone online. That about cover me! I'll checking in on a regular basis.... JB
