Few pics of the andouille I smoked this weekend. I made the sausage Wednesday, Thursday, & finally smoked it Friday night.
Drying here. I just grabbed whatever I could to keep it level.
I put charcoal under the pot to keet it from getting too hot. I put a few coals in the pot to help the apple wood smoke. I was able to start the temp around 130 and slowly ramp up to about 180 by the time I finished 4 hours later but I had to tend it almost constantly in this pit.
Cooling to keep it nice n plump. I hung it out for about an hour to bloom after this.
