I've been reading a lot of posts lately on briskets not turning out as well as the OP had hoped...

...understandable, 'if dey was easy, everyone would be doing it'

but don't look at an imperfect brisket as a failure...look at it as makin's for the perfect chili...

My first try failed because I didn't allow enough time. A brisket that gets done early tastes a whole lot better than one that's not been cooked long enough.
 
Q: How long will an Xlb. brisket take at 225? 

A: As long as it takes for you to learn how to cook at 275 and leave the darn door shut!
