The wife picked up a 14 pounder today. The goal is to have it ready Saturday night for the ball game. It is frozen, so my question is in regards to the best way to defrost it. Ive seen mixed reviews. I was planning on doing it in the refrigerator. One person suggested 5 days, another suggested 24hrs per 5 pound. Butterball suggested 24 hrs per 4 pounds. After the defrost I was going to do a 24 hour brine. My main concern is defrosting too quickly and leaving it defrosted for too long before the smoke. The fridge is at 37 degrees if that helps.

Leave it wrapped and in the fridge. It will take a bit longer to defrost that way. Check it on Wednesday to see how far it has come along. Even if it is totally defrosted on Wednesday you are fine. If it is still frozen try to remove the gizzards and neck bone packages. Then place in a pan and wrap with plastic wrap and back into the fridge. If on Friday it is still a bit stiff you can run it under some cold water for a few to loosen it up. You can still brine it if it is a bit on the stiff side.
