Roast Beef With Attitude

I was thrilled with the roast beef I made for sandwiches a couple of months ago and it was time to try again.   The first time I smoked roast beef sandwich meat I used a simple rub of salt, pepper, garlic, and onion.  This time, however, I wanted to try something a little different.  While at my local spice shop recently, I spotted two items that I wanted to incorporate.


The final rub was:

2 T smoked sea salt

1 T Horseradish powder

1 T Worcestershire powder

1 T Mustard Powder

1 T Onion granules

1 T Garlic granules

1 T Black pepper


I used eye of round, and began by trimming away silverskin and excess fat.


Rubbed up and ready!


Out of the smoker, ready for a foil wrap.


Football was about to come on, so I rushed the slicing, hence the juice running everywhere.  I blame my impatience.


The first time I did roast beef I took it to 135 and loved it, but the wife was a little hesitant.  I took this one to 140.  It's okay, but I prefer it a little more rare.


The details:

Smoker: MES40 with AMZNPS

Wood: Pitmaster's Choice

Smoking Temperature: 225

Final Internal Temperature: 140

Duration: Approximately 3.5 hours

Final thoughts: I love the kick from the horseradish powder!  The Worcestershire is subtle at best, and the mustard rounds off the rub nicely.  If you can find some, try some horseradish powder!  It will be reappearing in a lot of my future beef rubs.

I used Pitmaster's Choice blend of pellets, which I believe is a blend of cherry, hickory, and oak. Someone please correct me if I am wrong. I'm too lazy to look right now. :)
 
What cut of meat did you use?  How many pounds did you buy and how many pounds did it produce?  I'm ready to give it a try.
 
Looks great I did one a ways back and rubbed with McCommick steak seasoning was great but yours sounds wonderfull will have to try it.

Oh, and where in Cincy is the Spice Shop you use... the one I used in Detroit closed and I don't like paying all that shipping from elsewhere ...although WE(Trish and I) enjoy road trips(ex-truckers), and that would be a good I-75 run... might even stop in at the Stoneyridge T/S and visit the Bar for some Dancing-or is it gone like the one here at Toledo-5

The spice place your asking about is called Colonel De.  He has a place in Findlay Market in downtown Cincinnati and another in a store called Jungle Jim's in Eastgate.  I highly recommend visiting either place.  Findlay market is all local vendors selling everything food related.  Everthing from restaurants, to fresh seafood and vegetables and meats along with Christian Moerline beer garden!  Jungle Jim's is a huge grocery store with food from everywhere in the world including a hot sauce section thats unbelievable!!
 
What cut of meat did you use?  How many pounds did you buy and how many pounds did it produce?  I'm ready to give it a try.
Sorry to delay my response...missed this one somehow.  I used eye of round (packaged as beef round eye by the butcher).  Because I only smoked it to around 135-140, not much moisture was lost.  It was about 5 pounds pre-trimmed, and produced just a little over 4 pounds of sandwich meat when it was all said and done.  In short, it is awesome roast beef sandwich meat for around 5 bucks a pound.
