I put a 15lb brisket on my Bradley smoker yesterday around 6pm. The smoker itself has a digital timer on it that will set for a maximum of 9 hours and 40 mins. When I went to bed at 1am I forgot to reset the timer and te smoker turned off shortly thereafter. I woke up around 5am and jumped out of bed realizing what I did and quickly restarted the smoker.

Onto the details. Prior to going to bed the brisket's internal temp was 156, and the smoker was 225F. I rubbed the brisket a night before and injected it prior to putting it into the smoker. The smoker was off for only a few hours, at which time it cooled down on its own without being opened. The internal temp of the brisket measured 119 when I restarted the smoker.

Will everything be fine? The brisket is up to 180F now and wrapped in foil, still cooking, but I want to be sure that it's perfectly safe.

Chalmber, morning and welcome to the forum....  You should be fine.... Here's why....   Meat was up to 156 IT.... Smoker up to 225... All the bacteria has been killed.... Smoker door not opened and no bacteria had time to "get hold" on or in the meat....  Smoker turned back up to 225 at least to get the meat back up to 180......   Hold the meat at 190-205 in the smoker for an hour or so.... check for tenderness with a toothpick inserted in it.... If it slides in easily, the meat is tender....  Dave
