I'm relatively new to the forum, but got into fray due to some peer pressure from some coworkers of mine.  I had saw something about ABTs so I decided to do a version of it for a tailgating party and they turned out great!

Unlike a lot of the ones I see on here, I don't half my jalapenos, instead I cut off the stem, cut them vertically and hollow out the seeds.

Next I prepared some pork sausage mixed with some Montreal Seasoning (I love that stuff).


I then took the sausage, along with some cubes of Monterrey Jack cheese, and stuffed the peppers.


I then took some strips of bacon and wrapped them up, pinning them down with a toothpick.  I elected not to get the thick cut bacon because I was already loading up on the pig-factor with the sausage. ;)



Preheated the 30" Electric Smoker to about 250.  I cooked them for about 2 hours (until they hit temp on the sausage).  I went with the Mesquite wood chips to notch the deliciousness up a bit.


Oh ye poor peppers, thou will soon meet thy fate.  Wrapped them up in aluminum foil and headed out to the stadium for a great day of drinking, eating and FOOTBALL!  


And it helps that our team won...
