My BIL gave me some of the Gator that he caught  so I decided to make up a few lbs of sausage with some of it. I used 50% Gator and 50% Pork Butt..I cold smoked it for 6 hours so I did use some TQ..I thought it came out real good..

First time use of my new smoker I just built...


All Vacuum sealed up...Into the freezer..
 
Man that is some good looking sausage - what is the green slurry

Roller, morning... Sausage looks good....  What flavor does gator bring to the mix ???  I've had snapping turtle and it was a very mild meat...  Dave

Your sausage looks awesome but this is where your suppose to tell us whats in the green secret stuff. You know in the bowl????

Alligator is a mild flavored meat and a little on the tough side. It has white and dark meat. Its best when ran through a meat tenderisor.

Yes there is but it is by Lottery only. I have been trying to get tags for years...

Gary that is all of my seasonings..The green is the Chopped green onion and the Parsley...
 
Looks Great!! We are kinda short on gators here in Wisc. but I sure would like to try that recipie!! We are headed to Florida in a week, hope I can get me some gator meat!
