Just a quick post to introduce myself. I have lurked around here for many years and received Jeff's news letter for quite a while. I finally joined up!
I currently and have for the last 8 years been using a Great outdoors Smoky Mountain (large one) for my primary smoker. I have modified it with at "mailbox" smoke generator for cold smoking. I have also tweaked a couple other things to increase the flame output for things I like to do during the cold weather months.
My primary grill for camp use is a StoveTec 2 door rocket stove, or a grill placed over the fire. My 12"-16" D.O. are ever present and used with for both camp cooking and at home.
I grew up in the outdoors, hunting, fishing, backpacking, boating. My family has a charter fishing business and I worked doing that for most my youth and into my late 20's. To say the least our freezer is always full of whatever we get. We've found the best way to prepare all this good stuff is right outdoors, grilled, smoked and fresh!
