I put this hunk of pork on the grill at just after noon yesterday, it was done about 8 hours later.  

We broke it open today for lunch


Used the minion method with apple wood placed among the charcoal. It was 39 degrees outside with decent wind gusts and the kettle held fairly steady at 220 - 235. Saw temps spike to 260 when the wind would kick up but would settle back in once it got still. ONe of the easiest smokes I've done, and my first on Charcoal.
 
Looks delicious. How big was your butt? Maybe I just buy bigger pieces of meat, but I've never come close to getting a smoke done in 8 hours.
 
thanks all. it was an afterthought to be honest. ran out, got some rub off the shelf rubbed her down, and started the coals. it was a small butt at just over 4.5 lbs but we have pulled pork for the next couple of days. I was very surprised at how well the kettle did with the temps being so low outside and the winds. I can just imagine how the wsm does. I need bigger grill. :grilling_smilie:

True Story:

The boy ( going on 10 months old and just cut his third tooth) was a bit cranky

when I got home last night. Got the meat out of the fridge, gave him a hunk of it, and he wanted more. We stood there eating meat for awhile. 

he wasn't cranky anymore.
