Well....the ham was smoked!

Got a pressure canner a few weeks ago and have been dying to use it. I pressure cooked a chicken last week for chicken and rice and it turned out delicious.

Today the menu includes a double batch of bean-n-ham and a batch of Cajun bean-n-ham simmering til noon then into the pressure canner they go...well 7 quarts anyway....there's 2 quarts extra for early consumption!

Here's the beginning of what I hope is some tasty soup!


Let's hope I don't blow the place up  when I put the canner to work!
 
Well the canning process went just fine but I learned something...a 15 bean soup mix won't work for this purpose. Some of the beans just aren't stout enough to stand up to the pressure. Oh well, the soup is delicious and I don't even mind some of the beans being mushy......
