ok so i have two 9.5 shoulders i'm going to smoke at the same time. I have a brinkmann smoke 'n' grill (charcoal) i've converted to propane. They are stacked racks. Tips, suggestions and things to watch out. i havent smoked anything stacked on both racks yet?

Just know that one of them or both of them might stall on you so don't panic, just ride it out and it will eventually get done

i was doing a 10lb shoulder for PP and started it with a stall in mind like the last ones i did....while i was waiting for foiling temp to be reach of 165 i read this link found in a thread here....

it said to foil at 140 to 150 degrees and as i read that part it was time to check temp as i knew it was close to that by then....temp was 149 so i foiled it and back in the heat, well it never stalled on me and that 10lb butt was done to 205 in 5.5 hours....not that it was only 8am with the temp at 205 and plans to eat at 2pm it went into the cooler and left it in the sun till guests were here to eat, when i pulled it for sammies the meat was at 170 degrees still at 3pm....fluk maybe but reading bout the stall on how it was explained in the link the meat starts to cool once it reaches it's sweat temp and cools itself or stall the temp from raiseing untill internal temps start to rise again....but foiling it at a lower temp before the stall temp is reached will stop stall and let the meats temp keep going up....that's i how read it and experienced it myself, so from now on i will foil at 145........bob

thanks gents! all this info is great. i'll be sure to take some pictures to post. Anyone know what kind of grill propane tank time frame has. i'll be trying to keep a steady temp of 235. Should i get a second tank??

Well everyting sounds good so far but It's gonna be along night for you. If you just put them on around noon you should be done around 10ish or so.

I'd get a seconds tank for the following reason:

Say you know it takes 5lbs of propane to smoke for 10 hours (this is a made-up figure)

If you have a single tank with 3 pounds left, you will need to get it refilled before you even start.

This will waste your time, and possibly money as most places charge a flat-rate for a 20 pound tank refill

If you have 2 tanks, you can either:

1. Use the remaining 3 pounds, and then switch-over to the full tank

2. Just use the full-tank, and not worry about switching

For option 1, you can then refill the empty-tank at your leisure

In option 2, you just need to make sure you eventually use your lowest tank and get it refilled

It's always good to have a spare. How long a tank will last depends on how efficient your smoker is. I think I pushed 50 hrs.on my last tank after doing some mods to my unit. Wind and outside temp will also be factors.

So the smoke went great. i kept the temp between 235-265 for about 8 hours. Wrapped them in tinfoil and towels and threw them in a cooler for about an hour. They were perfect. I made up a apple cider dip sauce on the side that turned out great too. I probably still have half a tank of propane left too!! The lower level grill shoulder always held a lower temp and took an extra 30 minutes on the top grate to finish. Thanks again everyone for the input. i'll try to get some pictures on here when i'm not at work!!
