First Smoked Pre Cooked Ham - IN THE SNOW!

Hey all! Had a 13.25 pre cooked shank ham in the freezer and since I have to get all this food ready for elk hunting camp and then the BF's waterfowl hunting trip, I decided to smoke it, save some slices and grind and make ham loaf. So at 7AM I headed outside to preheat the MES and to my surprise it was SNOWING

! Just a dusting for now and only on grass, cars etc so what little we got won't last too long. Supposed to get some more snow showers through the night and tomorrow night.

Trimmed off the skin, scored it, slathered with a mixture of Stone Ground Mustard and Dijon Mustard, then applied Pecan and Honey Rub mixed with some Dark Brown Sugar. Into the MES at 240* with an aluminum foil drip pan and just going to let it ride for a few hours with some Maple and Pecan chips. After a couple hours I'm going to spray it a couple times with some apple juice and Capt Morgan's.

That is going to be one tasty ham. 

Can you send some of that cool weather this way - we are still getting slammed with heat. It is supposed to cool a little this weekend 

I have 2 hams in the freeze from the pig we bought - cant wait to play

It was awesome and thank you. I'd send some cool weather but I don't think you want it as cool as we had it - Saturday's high was 25* with a 6-8* wind chill and at night it went down to about 10-12*.

We didn't get any last year.

Thank you! It was really cold here over the weekend and I would have liked more snow if it's going to be that cold!
 
Put the ham in at about 8 AM and took it off at 2PM. Just a bit later than I wanted but I got hung up at the post office.

Great "bark", moist and juicy. Tasted great with the Pecan and Honey Rub. I didn't get to spray it, just put apple juice and ham broth in the drip pan. I took some more slices off it and I'll make a couple homemade ham loaves from the rest.

Excellent, Alesia. This year, there's no need to send snow here, I was happy with the ice storms in Texas, 1 cold day and back to summer - called a "Blue Norther". I was in Temple, faro not get snow that hit the ground for maor than a day. Now, I wish it were the same here. Brrrrrrr ,cold , and these folks up here don't know when to slow down ,just slide on by and into the ditches. Wonder if they ever think of leaving earlier and go slower , thier hard on my vehicles.

I've got a 19 lb. ham (cured three and a half weeks) going in the smoker tomorrow, 'twas too windy today....can't wait!

Thank you Stan! Oh I know about the way some drive back in Ohio (grew up in SE Ohio) and Pennsylvania-get some snow and/or ice and some drive like they are on an ice rink! Leaving earlier? Now why would they want to do that when they can drive, do makup, shave and talk on the phone they are driving. Usually when we get snow here, sunny again within 24 hrs and the snow is on it's way to gone!
