Just kicked of smoking 4 9# butts. I will be doing what I call Moose Balls later in the process. Rubbbed the Butts with my Pork Rub last night. Put em on about 8:30 this morning. WIll be serving them on Sunday. Using Hickory and Apple for the Smoke. Here is some Q-view....

Thanks. Started working on the Moose Balls. They are a baby Mozzarella Ball marinated in Olive Oil and Italian Spices then stuffed inside a chunk of Hot Sausage, formed into a ball, dusted with Pork Rub then wrapped in BACON (everything is better wrapped in bacon). I will add to the smoker on the top shelf for about an hour and a half. Here are a few pics of them being made, haven't wrapped in bacon yet.


 
Those Moose Balls look very good.

Well your butts look great and so do your "moose balls" We here call them "Moink Balls" here. Same thing but with cheddar cheese and still bacon wrapped.
 
OK gang, the butts are in the cooler all wrapped up for the night. It has been fun. I will post a few follow up pics tomorrow.
