Thank you! The casings were dry when I put them in the smoker. I had them in the fridge, uncovered on a rack after I stuffed them.

Thanks Kevin! They were really good and I've got seasoning for another 10 lb batch (for elk hunting camp). BF wants some with a bit of heat - not a lot - so I'm going to do some with a bit of cayenne and some with crushed red pepper flakes. I like garlic, so some will have extra garlic!
