Hey everybody, new here .Just bought a 2$ brinkman charcole smoker at a garage sale last sun. washed it up and its ready to go. was going to start with an arm roast thats from the half of beef we got in july.this is the plan.thaw roast starting tonightrub roast with some concoction I make up on the flyleave in fridge until sat or sun.load with charchol light go to beer storecheck temp.add wood(hickory) add meat crack beer X4-5 timescheck temp.rinse repeat.any and all advice welcome.stickman.
 
Sounds like a beginning plan alright

. A good probe themometer would be a great asset , then cook to internal meat temp. you want -Rare -165°  ,  Med.- 170°  , Well - a wasted piece of good

If you get a chance try and do a practice burn so you can see what the temp of the smoker is doing and what you need to do to keep it where you want it before you risk messing up a good piece of meat. Like Stan said, a good probe therm is a must for the meat and also a good therm for the smoker, I wouldn't trust the one that's on it now.
 
GOOD LUCK!  The practice session sounds like a great plan.  It will help season the smoker again, and get you familiar with how your smoker reacts.
