All,

I was wondering if anyone could turn me on to a good injection and foil sauce for brisket.  I have done so many without injection I am ready to try something new.  Unfortunately I have not found a whole lot of information on either.

any care to share some base recipes?

I haven't injected brisket but I add beef broth when I pan and foil it. Got that from one of Jeff's newsletters a few months ago.  I admit I was a little afraid of doing a brisket till I saw his tutorial. First one came out awesome!

I smoked a 9 lb. brisket this past weekend and injected a apple blended solution just prior to adding home made rub. Cooked low and slow, the results were great! I would recommend the injection process. THe brisket was moist and tender, with a great smoke ring.

Marinading is another option.  I have used Stubbs Beef marinade over night.  I also just use either Coke or Dr. Pepper in the foil pan when I wrap.

Thanks for the tips.  I have used a pure beef broth injection before but I think i used too much (about 2 cups for a 10lb brisket) and the brisket came out a bit too beefy tasting.  Made it seem under seasoned for my taste.

I will keep searching.

I use a mix of mostly beef broth, with some soy and worchestershire sauce added. Works for me.

I have injected with beer a couple of times, Erdinger Dunkel mostly. If you go the beer route, stick to the ales and the like. leave he Bud and Coors in the fridge.

I injected the last brisket I did with a mixture of beef au jus and beef stock. It gave it a wonderful taste while not covering up the beef flavor.
