Failed Attempt at the Fatty

Hey folks, so the other day I decided spontaneously to do a fatty.  BIG mistake.  I learned very quickly to never be in a hurry when it comes to smoking.  So it was about 230 pm and I decided on breakfast for dinner.  I wanted to make a breakfast fatty, fry up some bacon and make chocolate chip pancakes.  I made homefries from scratch, scrambled some eggs with chopped ham and put in an enormous amount of colby jack cheese.  Unwisely, I did now let everything cool enough and tried to roll the fatty while it was room temperature.  Needless to say, it fell apart.  Onto the smoke:  Everything worked as I had planned, I smoked with peach wood at about 230 for 3 hrs.  I also threw some ABT's on there as well. . .standard cream cheese kind.  Anyways, here are some photos before the smoke.  I know the reason it did not work good and next time I will put the sausage in the fridge after rolling it out.




Finished ABT's.  Overall, I cant complain about the flavor  . . .everyone's taste buds were going haywire.  I appreciate all the feedback in advance and thank you for taking the time for a looksie
 
When rolling it, wrap with saran that is longer than the fatty...  grab the ends of the saran and roll it more.... when it gets tight, place in fridge until cold or overnight...  then wrap with bacon very tight....  then cool again....  then cook/smoke.... It should stay round through the cook/smoke and slice nicely....  Dave

Great advice by all the guys. Getting the roll firmed up and chilled is important

Thanks for the tip Dave, much appreciated. S2k9k, I have that thread bokmarked  :)  It was just a last minute decision and not a very smart one unfortunately.  Next attempt promises to be much better thanks to all you guys
