I just got the Maverick 732 and installed a lamp pipe mod…it is very sweet…Maverick is awesome…I have the 22.5 WSM humming along between 280 and 300 degrees. I didn't use a water pan this time just to see the difference from using water the first smoke. I will pull the chickens off at 163 degrees then tent to get the temp to 165 degrees. Used the minion method with one chunk of apple wood…. btw how do I post pictures?
 
Hi Kdawg.  Sounds like you are headed in the right direction with those yard birds.

And, use that water bowl on the WSM.  It helps regulate the temperature and helps keep moisture in the smoker.  

Minion method is the way to go, same thing I do, but one time my water bowl went dry on me and I lost all temp control even with the vents closed down.

To post pictures scroll across the ribbon at the top of your message and to the right you will see something that looks like a picture.

Look to the right side, 5 to the left of the happy face (emoticon icon).  Press that and it will guide you through the picture uploading process.
