I had two butts on the grill smoking them at around 250 for about 8 hours, then fell asleep.  By the time I woke up, the grill was cold.  Butts were still warmish, but not done.  Should I just start it up again and cook until internal temp is right or will it dry out becasue it will take a long time to reach that temp?

Not sure what you decided to do. Assuming you did not inject it. As long as the pork was over 145 before the smoker died and it was only below 140 for less than 4hr and you reheat it to above 165 in less than 2hr you should be ok. It is not the perfect situation to have., but save able.

But 8hr at 250 you should have been in a good place as long as they were not monster butts....

For future reference at this point the fastest and Safest plan is to put the meat in a Roasting Pan with some liquid of choice, Apple Juice, Beer, Cola, Etc. Cover tightly and Roast at 325*F until an IT of 205*F. Give a rest and Pull it...JJ
