Thought I would try to do my own fatty, all the others I have tried to smoke were jimmy deans ,just cut the wrapper off and toss them in the smoker. This one is made with sweet Italian sausage ,provolone cheese and mushrooms. The taste was pretty good , I just did not get it wrapped quite tight enough.

after about 3 hours in the smoker

ready to eat after resting for an hour and a half

Thanks for looking and any tips would be greatly appreciated.

Well played!  Don't worry so much about the weave..that's putting form before function.  As for advice, look for the soon-to-be-posted fatty throwdown results for some inspiration.  I know I am!
