This past weekend was my FIL birthday, and he asked me to make ribs. Sure thing.
The temps were in the mid 60's in the AM when I started this beast up and it took over an hour to get to 225, all vents wide open. Slow as heck.
It was windy with some good gusts occasionally, but I really didn't think it would affect the cook all that much. It was warm, right?
Anyway, I used @10lb of Kingsford with some apple chunks and thought that would be enough, it wasn't. I wound up adding more at the end of the cook to finish it. And I only did (3) babyback ribs, 2-2-1 method.
I made a ring of charcoal from say 7 o'clock to 5 o'clock and placed 12 lit briquets on one side.
First cook a few weeks ago went flawless after I adjusted the vents correctly. This one, not so much. I see that BAMABBQ and some others use the IQ100 (or something like that). Maybe I should too.
No pics because I was frustrated. Sorry. Looks like I'm buying a welding blanket...
