Fired up the Weber kettle about 11:00, using kingsford briquettes and apple and cherry wood chunks.  Planning on cooking them 3-2-1 method.  The kettle works great for burning 8-10 hours without adding any fuel.  I used some fire bricks I had around to block 1/2 of the charcoal grate to keep the coals to one side.  Heated up 15-20 briquettes and dumped them in between the unlit coals and wood chunks.




Rubbed with Jeff's rub and let sit overnight



These were purchased at Kincaids meats in Indianapolis, they get them from Indiana Packers (Indiana Kitchen) up in Delphi, IN.  Best spares I have found by far.
