Skinless thighs for dinner

In watching what we eat a bit more we are adopting the practice of removing the skin from chicken before we cook it. So bought some thighs and removed the skin for tonight's dinner.

Setting up the WSM - half a ring with 4 chunks of mesquite.

Put the chicken in a bowl with rub all over it to get happy for a while while the smoker was getting going.

Oh how I love thighs. Those look great. I have a dozen thawing in the fridge for tonight.

That is my weakness.... many many moons ago my family introduced me to eating broccoli by dipping it in mayonnaise. Horrible thing to do to a healthy veg... lol.

Mayo on broccoli...that's a new one on me but not the weirdest thing.  My youngest son likes to put bbq sauce or honey on his broccoli

Looks great! I thought the mayo was for the chicken though 

. I like mayo on fries whenever I opt to indulge with fries.

OK - you son wins! LOL that is a different one.

The chicken was moist enough not to need any mayo, but the broccoli was way to helthy to leave alone... lol.

I hate to waste that wonderful skin, but smokin it has to be one of the best ways to go if you have to.
