Hello fellow SMF smokers/canners,
I have been making and canning my own BBQ sauce for about four years. It took about 2 months to perfect the recipe.
I don't give out the recipe because everyone that eats my sauce is convinced that I should market it, and having been a business major in college, this is something I am considering.
Anyway, I mix my wet and dry ingredients, most of which you can see in the first photo, then bring it to a simmer for about two hours.
I then fill the mason jars to about a 1/4" from the top and bring them to boil in a water bath as the sauce is tomato based and there is enough acid to support this canning method.
I only have a couple pics so far but I hope you enjoy my q-sauce-view.
For some reason the sauce looks a lot lighter in color than it actually is, but believe me, the taste is unbelievable.
Not too sweet, not too tart, just right in my opinion and about a hundred others. Makes me happy when people enjoy my food.
When I apply the sauce to ribs, I take out a jar, dump it in a pan, add two tbs of honey to make it shine, and apply it to the ribs. Beautiful and tasty!
