water and Thermometers

I just got a Mav ET-732 and am about to test it. I was just wondering why it says not to put the thermometer in water and all the calibration tests are done by using water. I take it they just don't do well in prolonged exposure to water is this correct? And as far as cleaning it, would the best way to clean it be just get a damp paper towel and wipe it off? Is there any kind of cleaning wipes like they make for granite counter tops and stainless steel, etc that would work on the probes?
 
You can put the probes in water but don't put it so deep that where the cable connects to the probe gets wet, that is the part you want to keep dry. I clean my probes with a clean paper towel and some isopropyl alcohol, I also wipe them with this before injecting into a piece of meat. You can buy alcohol wipes but I find this much more cost effective.
 
Also, water tests are not reliable unless done correctly.

The boil test (which is probably most important anyway" must be done at a full and rolling boil.  Use tongs to save your fingers and keep the wires dry.  Also remember to adjust for altitude, not that I think Hotlanta would be a major altitude issue. Maybe a degree or two depending on where you are in the city.  Probably within the error factor of the therm anyway?
