Brisket with Q-View

 With todays brisket I am trying something new. I used some lump charcoal in with my pellets in my AMNPS. (note to self. All 3 rows burned in less than 5 hours.) I am going for a smoke ring in my MES40. I am also using mesquite brickets in the chip tray.I injected the brisket with some au jus and slathered the outside in a mixture of mustard,onion,and my rub all blended together and allowed to marinate for 14 hours. I put this baby in at 2:30am for dinner tonight. Here is my first picture after 5 hours in the smoker. I trimed all the fat off the entire brisket then place it on the rack above it to drip down on it while it renders.

 
Boy, dunno what looks better, the brisket or the fat on top!  (DOWN Pops.... diet!  Diet!) 
 
 Looks like your brisket is off to a excellent start!!! I'll be waiting for the rest of this Q-View!!!

Well the brisket is out of the smoker and all wraped up in a coller resting. I hope the charcoal in the chip tray made the smoke ring I was attempting. I will be posting pics as I unwrap and slice. 14 1/2 hrs.  in the smoker and 25 min. longer to see how it worked.
 
1/8 in. smoke ring not worth all the extra effoert but i did like the bit of flavor the charcoal imparts in the meat so i might do it more often.
