I can't get my smoker to produce smoke under 220-225, which makes things a nightmare trying to low smoke salmon or ribs. I have tried open vents closed vents, I have to play with it every 5-10 min to fluctuate temp to get smoke and cool it off. Please help I am planning on smoking my first rack of ribs on Sunday for my sons bday.
 
switcher, morning and welcome to the forum....   In a perfect world, you would have the AMNPS from Todd already in your arsenal to make perfectly smoked foods...     http://www.smokingmeatforums.com/products/amaze-n-pellet-smoker  ....   Until you can get it ordered, place flavor chips, of your choice, in an aluminum foil pouch... sealed with a couple of holes poked in it and place directly on the heating element...

The thinness of the foil will allow the chips to smolder at a lower temp.....  Do Not soak the chips....  I recommend about 1/2 cup of chips to start per pouch...  maybe make 2-3 to get you through the smoke...  Please stop into "roll call" and introduce yourself so our members can give you a proper welcome....  http://www.smokingmeatforums.com/f/133/roll-call

i tried that and it burned right through the foil at a pretty low flame and made a mess
 
Sorry for the bad advice..... I did not know you had a propane unit.....     Use a tin can that has been burned out to remove the coating.... then put chips in it...  the thinner metal will transfer the heat better to the chips and they should smoke at a lower temp..... cover the chips with the lid you cut off the can to keep the air out and preventing a fire in the chips...   there is more than one way to skin a cat...   Dave
