I have to go out of town for work for about 3 weeks (it's about time, been sitting around too long) so I thought "I need some jerky to take with me". I had about 8lbs of London Broil in the freezer I caught on sale for half price awhile back so I sliced it up Wednesday evening and it is marinating right now, gonna hit the smoker when I get home tonight. 

While I was getting it out of the freezer I found about 3 dozen wings I had also caught on sale and figured I better get them smoked before they get freezer burnt, so they will be going on tomorrow.

I also noticed I am almost out of cheese, so what better way to resist the temptation to eat it early then to go out of town for 3 weeks. Yep, I went out and bought 6lbs of cheese and it will get smoked tomorrow night when it cools down a little.

I will update this with some pics as I go along this weekend, I have a ton of things to do before I leave but the smoker is top priority. (Sorry no pics of the jerky prep but we all know what sliced beef looks like, right?)

Yes i will Dave! Besides the jerky I'm taking some pulled pork, brisket, thin sliced smoked roast beef, pastrami and my last block of cheese. And the hotel where we're stay has full kitchens in the rooms and a gas grill outside. so there will be some smoking going on there too!

One of the guys going works out of our Ft Hood office and he was here working once last year, we had a cookout at work one day and he brought in a bunch of ABT's. That was the first time any of us had even seen them, so I know he's a BBQ guy so it should be a good trip! That was the day I got hooked on smoking and bought my smoker online that afternoon after we got done eating!
 
I turned my GOSM propane smoker into a charcoal smoker!

The wings are all prepped and ready for tomorrow, sitting in the fridge right now soaking up some flavor.

Just my usual, Franks Buffalo Wing sauce and some Creole Butter injected deep into them:


Had a nice T-Storm hit a few minutes ago, just what i need, more rain!!! I hope with all this humidity and moisture the jerky will dry!
 
What kind of cheese are you smoking, and what wood.  I smoked a variety of cheese last week with Pitmasters Blend in AMNS, and doing some more this evening.  I was thinking of just Hickory for smoke.  Thanks.  Steve

I'm going to do some sharp cheddar, monterey jack, colby jack, pepper jack and swiss. Going to use Pitmasters Choice pellets.
 
Thanks for the reply, I have a week to try mine that I did w/PMB.  I think I will go with the Hickory this time, Mild, Med, Xtra sharp cheddar, Gouda, Jarlsberg this time.  Steve
 
Ok I'm not too happy with how the jerky turned out. It just didn't seem to dry right. I think it was too humid, I checked at 10:00 and the RH was 95%. Some of it dried in about 2.5 hours and almost seemed over dry and some took over 6 hours and was still a little under dry. I put it all in a plastic bag and sealed it up for the night. This morning it seemed the too dry pieces absorbed some moisture from the not so dry pieces so that turned out pretty good. It has a nice texture and a good chew and isn't tough, so I'm happy with that. I just don't think it has much flavor or else my taste buds are shot. My daughter and my dad both said it is really good but I just don't taste it. Oh well, I'll just chew on this for awhile and try again.

On a better note, the wings came out great!!! Even though we had another T-storm about an hour after I put them on. I don't think it's ever going to quit raining here and my yard is never going to dry out! It's supposed to rain some more tonight and I'm wanting to smoke some cheese...hmmm.......

These are going in the freezer and will be waiting on me when I get back!

When it cools down a little more outside I'm going to go battle the rain and smoke some cheese, see you all in a bit!!
 
Well that was a nice little storm! Don't know if there will be any cheese smoking tonight, my smoker is surrounded by 2 inches of water and more on the way!

 
What dedication, smoking in 2 inches of water.  Well worth the effort though, those look spectacular.
Nope, I gave up the idea for tonight, try again tomorrow!

Trust me, I want out of here so bad!!! I'm afraid they are going to classify this wetlands and I won't be able to sell! It's been raining almost everyday for 3 weeks now. The ground is so saturated and my lot is flat so there's no where for it to go.
 
I got up this morning and the water had receded enough I didn't need my kayak to get to the smoker. It was 74* outside, overcast but no showers in the area yet, so I better get this done while I can. I got the smoker cleaned out from the wings and put my Mav in, it was 77* inside. I filled one row of my AMNPS with Pitmaster's Choice, lit it and then got the cheese ready. Stuck it all in and after 20 minutes the temp was only up 2* but I stuck a frozen 2 liter in just for the heck of it. About 3 hours and it should be ready!
