It has a thermostat which does control the heat,  but I need at least another 50 to 75 degrees.  Is there something I can do to the existing thermostat to get more heat?
Look at the data plate on the unit.  It should show how many watts the heater is using.

Also what is the make and model of the unit?  There might be a schematic on the web that will allow me to make specific recommendations to give you more heat.

Generally speaking the optimal set-up is to control your smoker with a PID controlling an electric element.  Doing it this way allows you to dial in a pretty tight control of the temps.
