My first smoke on the MES 40 - Ribs and Chicken Bites

Saturday was my first smoke with the MES 40, and I am very pleased with the results and ease of use. I used the A-Maze-N-Pellet Smoker with hickory pellets and cherry dust.

The ribs were rubbed with a sugar free rub and smoked using the 3-2-1 method. Also spritzed them a couple of time with a mixture of apple cider, bourbon, and water. They were nice and tender, but a tad bit bland. I think the next round I will marinate in maybe pineapple juice. Any suggestions would be appreciated.



The chicken bites were the real hit. I de-boned and skinned chicken thighs, and pounded them out. Cut them into strips, placed a chuck of pineapple on the strip and sprinkled with salt. Then wrapped it all up in half a slice of bacon. They were delicious!



The A-Maze-N-Pellet Smoker is well, amazing! It made everything so easy not having to constantly tend the wood, and the level of smoke flavor is perfect. It is well worth its price and works perfectly.
