First time with MES 40, does these temps look ok??

Morning,

This is my first time with the MES 40...what I got going so far...just wanted to see if you guys think I am on the right path.

I pre heated about an hour....to MES displayed 275, with about a full pan of water, vent wide open. Was planning on 3-1.5-1.5. Like mine with a little pull. I have 6 slabs od BB, 2 per rack .

I am about 2 hours into cooking.

These are the temps of my racks from top to bottom....which is my concern.

MES curently set to 237/ flashes to 236

1. Open (reserved for Corn later) MAV et-732 BBQ reads 240
2. 2 slabs MAV et-732 food reads 180
3. 2 slabs very accurate temp probe between them reads 224
4. 2 slabs MES meat probe 179

I am walking the MES temp down to get and keep the probe on rack #3 at 225.

I am pretty sure the problem with my food probes is that I wasn' able to get them in far enough for an accurate reading. There is no way they can be that temp. I really am not worried about those temps till I get to the last phase.
 
I think the high readings on my meat temps is because I didnt get enough of the probe into the meat. Not really worried about that at this point.
 
This is the exact reason that we do not recommend doing ribs to temp. There is just not enough volume to get an accurate reading.
