Did a whole hog for some family friends this past weekend. She was 174 pounds dressed. Put it on around 5:00am cooked for 12 hours and ate around 6:00. Mopped it every hour during the second half of of the cook. Smoked with cherry, apply and hickory. Cooker is a 400 gallon oil tank turned on it side, with a stainless steel "cookie sheet" that holds the pig. Enjoy the pics.
