After my first cook http://www.smokingmeatforums.com/t/...sm-ribs-undercooked-or-overcooked#post_851626 I decided to try my first Boston Butt.
We had a little end of the summer get together with several neighbor families on Saturday evening so Friday night around 11pm my butt was smokin! First long one on the WSM. It held temp again like a champ with little effort but I did go low and slow and had to feed it some charcoal a few times. It was a huge success. Sorry no q view but a couple notes:
11pm to to 5pm next day
Used Plowboys Yardbird for my rub
No Foiling
No turning or flipping
One healthy spray down with apple juice around 3:45
Took it out at around 196 and pulled immediately
No sauce on it.
Made 2 side sauces that were both big hits
Sweet Ketchup-Based Sauce - Combination of Blues Hog Original, Sweet Baby Ray's Original, Ketchup, Apple Juice, Yardbird Rub, Minced Onion, Minced Garlic and a tiny bit of pure maple syrup
Sweet/Spicy Thinner/Vinegar Based Sauce - Blues Hog Original, Blues Hog Tennessee Red, Apple Cider Vinegar, Tiger Sauce, Yardbird Rub, Minced Onion/Garlic - This one was really good.
Dessert.... Beer. Oh yeah, and... Apple Pie (moonshine)
