Turkey Meatloaf

Had some free time on Sunday so I decided to throw in a Meatloaf.  Smoked this at 180 for an 1.5 hours than finished at 350 until internal temperature or 165.  Turned out pretty good, and was able to get a good crust on the outside and nice smokey flavor.




 
Not my recipe it acutally came from a healthy eating cookbook, but I can't remember the name right now.  So you will see egg whites instead of eggs and oatmeal instead of breadcrumbs.  If you want to use eggs I would cut back to 2 and see how it mixes up.  This mix is already pretty wet.

The Meatloaf Mix ( I usually double this for one meatloaf)

1.5 lbs ground turkey

1 onion chopped ( I usually use a small onion  )

4 egg whites

1 cup salsa ( I usually forget this or don't have it when I throw it together)

3/4 cups old fahioned oats uncooked  ( Can sub in bread crumbs)

1 package Knorr Vegetable Soup Mix

Ground Pepper to taste - I usually just crank the pepper mill 5 or 6 times.

Then you can top with Ketchup or BBQ Sauce, I usually skip this step because I slice it for sandwhices and add it depending on how I feel.  If I make a BBQ Meatloaf I toss Jeff's Rub on Top smoke it at 180 for 1.5 then put some BBQ sauce on top and finish.
