Wife is out of town, so thought I would do a nice ribeye tonight for dinner.


Into the smoker....


Onto the grill for a nice sear....


Ready to be covered and rested....

And the Money Shot.....turned out a little above rare. Camera really didn't do it justice.


This was my first "reverse sear" steak and let me tell you, I was very impressed. Will be using this method more often thats for sure.

A side note...this was my 4th or 5th smoke and usually the MES runs a little lower on my maverick compared to the MES temp. However tonight, it was spot on. Just seemed weird to me.
 
Now you've done it - You'll never want to go back to the old grill only method.

I'm not allowed to anymore after the wife got a taste of what the smoker could turn out...

My local high end market has prime ribeyes on sale tomorrow so I thought it might be nice to make one for the Boss (come on, you KNOW who I mean!) and me.  I Googled reverse sear ribeye, only half expecting to get any credible hits.  And it led me back here! You've done EXACTLY what I'm going to do tomorrow.  Thanks for the heads up and for letting me know I'm not all alone!
