I finally got to make my first meatloaf. My hubby thought I was a little off my rocker, at first....

Here's the ingredients I had on hand. And yes, I use a package of cornbread stuffing for the dry. Adds a great flavor to meatloaf. Same as Stove Top regular stuffing!

Here it is ready to go in...

Right out of the smoker. Man, the smell was driving us crazy!

I barely got a shot of it sliced, because as soon as I sliced it, Ken was diving in! He doesn't think I'm crazy anymore! Hahaha!

Next time I'll do my fancy with peppers and mushrooms and stuff, but this first go around was awesome!

Nice! I haven't smoked a meat loaf for...uh...well, a very long time.

Hubby may not be so pessimistic about smoked foods now, huh? LOL!!! That's the way my first runs usually worked around here, too, until a few years ago. My wife and kids were the same way, saying things like: you're gonna smoke what??? But, they soon learned that, well, yes, you can smoke just about everything, and yes, it can be very good eating.

Great step forward, Angie! And, as my Avatar line reads...

Eric

Angie, great first meatloaf!  I never thought of that, now something new to add to the list!  Thanks for the idea and the Q-view.  Keep on keeping on.  Steve

Looks great what was the temps of smoker and IT temp how long did that take, what about 3lbs of burgre?? THanks I will have to try it.

I cooked at 220 for 6 hours total and the IT got to 175. I used mesquite for this. I think next time I will use a lighter wood and see what I get.

Looks awesome!...I need to stop surfing this site before meals!...JJ

Thanks everyone! Not too bad for a first go around. Meatballs sound great and that is my hubby's favorite, so I will definitely give that a try!
