rubbed em up last night , two slabs, other not pictured, gonna run the 3-2-1 and see what I get. Anyone foil after 3, take them to the oven do the 2, then unfoil in oven for 1 ? Not sure how much fuel I have left.
not real happy with how they turned out. I think I need better thermometer. the smoke flavor is good, they are tender and juicy inside, the bark tastes good , but they wanna fall apart when I cut them, I prefer ribs that hold together better while cuttin, I think maybe the last hour was too much, I shoulda pulled them earlier. Oh well, live and learn.
