If I keep it below 225 i dont get much smoke. This seems to be the case with both soaked chips and chunks

I also seem to have the temp bounce around a lot.

Any advise?

ikmon, evening and welcome to the forum...... Glad you stopped in.... we have many members with so much knowledge they are lining up to help you out with your problem.....

We need to know what smoke hollow smoker you have.....any mods to it....  etc....

Please fill in your profile as to location etc.... that will help us better resolve any issues you may have knowing temps, humidity etc...

Soaking chips just slows down the smoking process, for what it is worth....   If you have propane, lower the pan closer to the flame and cover it with foil with a few small holes in the foil.....  you also may need a pan with thinner metal to transfer heat better..... there are so many variables it is hard to figure which way to go.....  Dave
