My First Full Chickens

Thanks to this site, they turned out super good. Only wee little complaint could be they were just a tad, and i mean tad, bit salty but easily overlooked. Thanks for everyones help around here.


We couldnt wait to dig in so gone were the wings before i took a final picture..hahaha

Ok, so that pitiful looking rack of ribs was previously purchased in the Costco 3-pack not realizing there was 3 in there but assuming it was 2. Anyhow, this rack was frozen and thawed out last minute to go with the 2 chickens we did today. Once nearly thawed (not even 100%) I put it in with the chickens. No real rub to mention sitting overnight or anything fancy. I applied some salt, pepper, onion powerder, paparkia and garlic. I didnt even make a rub, i just applied them in layers. They were pretty much right over my coals for most of the first 3 hours at high heat mostly trying to nail the chicken. Then i wrapped them in foil with apple juice, agave nectar (saw that here recently) and some parkay since i had it left over from my Trigg attempt. Unwrapped after a full 2 hours and back on for 25 minutes. End result: Wouldnt you know it, they were one of the best i've made yet.....what the heck??

 Flavor full and PERFECT texture.

No love, no thought, no focus and we absolutely killed it. It's frustrating and satisfying all at the same time.
 
Bryce, those birds look great, and as for the ribs, sometimes the simplest things turn out the best.  Who'd of thunk it.  Keep on keeping on, Steve
 No doubt huh Steve? Makes me think sometimes we might over do it. Dumb it down and go with the flow!

Thanks, the birds were great, i mean super good. Probably my second best smoke ever. Next smoke will be a ham shank that i recently saw on here. It really looked awesome and we love ham.

Bryce, yes, KISS may be the best, look at our ancestors who started this smoking thing.  They just did it and hoped for the best.  Now, we try to improve on it with high $$$$$ gadgets.  Oh well, it is fun to have a few toys.  Steve
