Reading through the posts here I've gotten to wondering what is the "ONE THING" that made the difference in your smoking?

I learned in golf that if I can narrow it down to one "swing thought" and clear my mind of the rest of the junk, my swing is relaxed and easy.

In smoking, I pretty much concentrate on temperature. The rub, prep, brine, injection etc.... are all just things that happen along the way, but the temperature, both of the smoker and the meat, is my all encompassing concern. If I can get that right, everything else falls into place and it's a successful smoke.

What about you guys and gals out there? Do you concentrate on one thing in particular above others?

By the way, I was doing ribs in this pic, so no food probe. Also it was before I started messing with higher temps.

Wow that's a tough question, there have been so many things. I guess as far as equipment, other than my smoker I have to say my Maverick has helped me out the most and it has given me something you can't buy, confidence and trust! Trusting my smoker and being confident that it is working right has really made smoking easier for me which has led to much better food. The other thing (which was hard to learn ) is patience, that in itself has really given me better results and much better food. So it's hard for me to say just one thing but I think one thing leads to another and some really go hand in hand!
 
Thin Blue Smoke here...Temps are a close second but the right amount of smoke makes or breaks a great piece of meat.
