Hello all my name is Manny I have been smoking various fish and meats for about seven years now. I'm at the point that I will be replacing my Char grill and found this site by luck. I still consider myself somewhat of a novice. In any given year there's 7-10 of us that get together and have a big smoke out. It's been named Zak's Annual Birthday Cook Off. Most of us spend the year practicing to get together for this. We end up with over a 100 folks at the cook off and it's always a great family get together. Needless to say the trash talking starts a month or two before the event and keeps going after that. As an avid fisherman I also spend a lot of time grilling and smoking different types of fish.
