Can I get the butt done in 5 hours ????? we will see

Went to a BBQ class last year. They smoked Hot and Fast !!

So I will see if it can be done in 5 hours like his web site says it can..

I have smoked butts between 275 and 300 before . My target temp

will be 350 to 375. The guy who ran it said that the meat don't know

the difference between smoking at 225 or 300 + .

I used my reg. rub that has a lot of brown sugar in it. ( hope it don't burn)

smoking it in a pan with the fat cap down (to help protect from the high heat)

using my UDS. Hoping I can get the temp up to 350  and hold it there.

keeping a log of the smoke . updating it every 15 minutes.

will go to IT of 205. no foil , smoking it with Mesquite chunks

this is the first time using sand in a bowl (instead of water)

so here we go>>>> went to Schnucks this morning got a 9lb butt for $1.29lb

got home at 11AM. went out and lit  3/4 chimney starter . went back in rub the butt down.

went back out got my UDS out of the shed . filled the basket with unlit coals and wood.

put sand in the bowl and cover it with foil.  got the butt on at 11:45




not much of a fat cap.





this is the bowl of sand with foil covering it. first time using sand instead of water.


went ahead and probed the butt right away. Going hot and fast I won't have to worry

about the 4 hour rule.


here we go. smoke starting to roll .

now the butts been on for an hour and half . mark down every 15 min. what

the smoker temp is and the butt temp. the smoker took awhile to get up to what I want.

think the sand kept the temp down until it heated up.

at 11:45 the smoker was at 225 and the meat was 43

at   1:15 the smoker was at 345 and the meat was 95.

the smoker temp climb was slower then I wanted but again I think the sand had to heat up.

at two hours I will go take a picture of the butt .

well , thanks for looking , check back later and see if it I get it done in 5 hours. 
 
I'm very interested in hearing how the higher temp smoking goes.  I usually run around 235 with my MES 40 and would love to crank it all the way up to shorten smoking time.  I can't get your temps, of course, but I would like to go higher.

Butt been on for 4 hours the IT is 171.

The highest the temp was in the smoker was 370. stay around 365 for the last two hours.

the smoker temp is starting to go down. Its at 354 right now (4 1/4 hours into the smoke)

I have not touch the smoker yet. All 4 vents have been wide open the whole time.

Here what we are having for supper. 5 homemade brats , some red hot dogs, and some

pork chops put these on at 3:30 . Should be done in about an hour.

Can't wait to see the finish! Real curious to see how much smoke penetration it gets and how juicy it turns out,
 
IT'S DONE !!!!! BUT TOOK 7 3/4 HOURS !!

Took about two hours before the temp got to 350,

then after 4 hours the temp started slowly going back down.

by the 7th hour the temp was down to 244 and the butt was at 189.

So I foil and into the oven at 350. 45 min. later it hits 205.

If I could have added coals I could have keep the temp up around 350

the whole time but I would have to take everything out of the UDS to

add coals.  still think I can get it done in 5 if I can get the temp up from the start.

and keep it at 350+ for the 5 hours.

so this not over. I will try it again. Might use my side firebox smoker so I can add

coals as needed. been resting for two hours so time to pull it and see what I got.

will add some pictures after I eat some  "Hot and Fast PP"

Can't tell the differents between the PP that was smoke at 225 for 16 hours or the "hot and fast" PP.

so think as far as butt go ,from now on going to smoke at 300+. Still want to get one done in 5 hours

so will have to redo my game plan and try again. I like using my UDS so thinking about building a bigger

charcoal basket. Also want to be able to use my  AMNPS so think I'm going to steal POPs Mailbox method.

Well back to the drawing board. I will get one done in 5 hours !!!!

might have to eat a lot of PP before I hit that goal.

It looks really good! How was the bark? Is it as juicy as it looks in the first pic (smoke ring pic)?

Think you might be on to something here, can't wait to see your future endeavors into this!
 
i did a 9 lb butt/shoulder for pulled pork for my two sons B day this past sat....i was up at 3 am sat morning to start the fire and had the pork in my smoker at 3:30 am....it got up to 150 in 3 hours running at 240/250 degrees, but at this point i did it different then the norm....while it was in there i came here to look around for rubs and seen a thread with a link to understanding the stall....so i read it and sounded good what was said how it happens and why, but it said to foil it at 140/150 instead of 160/170 and when i went to check the temp it was at 149....so i foiled it in a alum pan at 150 with some finishing sauce you would put on the sammies and back in the smoker and adjusted the intake open a bit and run it at 290/300 and i got no stall and was at 205 in 5.5 hours....so by bout 9:30 am it was done and in the cooler and i left it sit in the sun, we were planning on eating at 2 PM....

by time i pulled it for sammies at 2 pm it was still at 170 degrees and sooo tender i couldn't belieive it....so yes it can be done in 5 hours at 290/300

I smoke hot and fast all the time which is why I don't often give BBQ advise, it's not what's normally accepted.

 You should Post some of your Smokes...I as well as others, are always interested in different techniques. Learning new stuff is what is so fun around here...

Yes Martin Please tell us! I like your technical style of writing and I think we could learn a lot about hot and fast from you. There is so much talk of low and slow on here but honestly I am getting tired of 20+ hour smokes to get a few pounds of pork. I would really like to get the same flavor, bark and juiciness in a shorter time.

 You should Post some of your Smokes...I as well as others, are always interested in different techniques. Learning new stuff is what is so fun around here...:biggrin: ...JJ

Will do, if I can ever shake this bronchial problem that I've had lately, it's really put the brakes on BBQing and other outdoor activities this year.

  Just a caution:

my pellets caught on fire inside the mailbox at 246°.  However, the AMNPS was positioned all the way inside the mailbox right next to the smokehouse.  I just pulled it out and blew out the flame and put it right back all the way in as I opened the door a little to cool it down a bit and didn't have any problems.  At that higher temp you may want to try pulling the unit further out from the UDS and it should not catch the pellets on fire.

Oh.  And, steal away, that's why I posted it!  lol!

I forgot to take a picture of the bark before pulling it. I did do a video when i unwrap it and pulled the bone out.
Will try to uploade it later. The bark wasn't as dark as the butts that been on for 16 hours so that might be the downside to hot and fast.
